Dhaniya Panjeeri (Coriander Panjeeri) Recipe

A traditional Indian sweet, Dhaniya Panjeeri is often prepared as an offering to Lord Krishna during Janmashtami. Made with coriander seeds, whole wheat flour, ghee, and dry fruits, this recipe is not only delicious but also packed with nutrients.
Ingredients
- Coriander Seeds – 1 cup
- Whole Wheat Flour – 1/2 cup
- Ghee (Clarified Butter) – 3-4 tbsp
- Sugar – 1/2 cup (adjust according to taste)
- Cardamom Powder – 1/2 tsp
- Cashews – 8-10, chopped
- Almonds – 8-10, chopped
- Pistachios – 8-10, chopped
- Raisins – 1/4 cup
- Saffron Strands – a pinch (optional)
- Black Sesame Seeds – 1 tbsp (optional)
Instructions
Step 1: Roast the Coriander Seeds
- Start by dry roasting the coriander seeds in a pan on low heat.
- Keep stirring until they release a pleasant, aromatic fragrance.
- Let the seeds cool down, then grind them coarsely using a mortar and pestle or a blender.
Step 2: Prepare the Panjeeri Base
- Heat 2 tablespoons of ghee in a large pan over medium heat.
- Add the whole wheat flour and roast it, stirring constantly, until it turns golden brown and emits a nutty fragrance. This process ensures the flour is cooked evenly.
Step 3: Add Dry Fruits and Nuts
- Now, add the chopped cashews, almonds, pistachios, and raisins to the pan.
- Continue roasting them lightly in the ghee for 2-3 minutes, ensuring they are well mixed with the roasted flour.
Step 4: Combine Ground Coriander Seeds
- Add the coarsely ground coriander seeds to the mixture in the pan.
- Stir the mixture thoroughly, ensuring the coriander is well incorporated into the flour and nuts.
Step 5: Sweeten the Mixture
- Add sugar to the pan and cook on a low flame. Stir continuously until the sugar dissolves completely and blends with the ghee and flour.
- Add cardamom powder for an aromatic flavor. You can also add a pinch of saffron strands for an extra layer of fragrance and color.
Step 6: Finish with Ghee
- Drizzle the remaining ghee into the pan, mixing well to coat the entire mixture evenly.
- Continue to stir for a minute to ensure the ghee is absorbed and the ingredients are well combined.
Step 7: Cool and Shape the Panjeeri
- Allow the mixture to cool slightly before handling. Once it is cool enough to touch, shape the mixture into small balls, or simply serve it as a loose prasadam (offering).
